Fragments of Time was created as part of our experimental range, first introduced with the fantastic 2022 vintage. Since then, we’ve continued to fall in love with this unique grape, refining our approach and pushing our winemaking forward.
The grapes were sourced from nearby Essex, destemmed, and fermented with indigenous yeasts before being pressed into old Burgundy barrels. The wine was aged for seven months with regular lees stirring to build texture and complexity.
This unusual and exciting wine is expressive and layered, showing aromas of tropical and stone fruits, hints of dried citrus, and a touch of white pepper.
The wine is named after ‘Fragments of time’ - a Daft Punk song taken from the album Random Access Memories.
